Bibingka Biko Recipe

INGREDIENTS:

  • 2 cups sweet rice
  • 1 cup brown sugar
  • 3 & 1/2 cups diluted coconut milk (1 can [15 oz] coconut milk and water to make 3 & 1/2 cups)

For the Topping:

  • 3/4 cup rich coconut milk
  • 1 (15 oz) can condensed milk
  • 1/4 cup brown sugar
  • 3 tbsp flour (for quick thickening)

HOW TO COOK:

  1. In a heavy pot, pour and bring coconut milk to a boil.
  2. Lower the heat then add rice, stirring occasionally to keep from burning — about 15 to 20 minutes.
  3. When the rice is done and almost dry, add the brown sugar then mix well.
  4. Scoop the rice mixture into a 13 × 9 in baking dish.
  5. Preheat oven to 375 F or 190 C.
  6. Prepare toppings by combining all topping ingredients in a heavy saucepan.
  7. Cook over low heat, stirring constantly, until thick (about 15 minutes) or brown.
  8. Pour topping over rice mixture, spreading evenly.
  9. Bake in the oven for 30 minutes or until the topping turns brown.
  10. Allow to cool before serving. Enjoy!
