Easy Inihaw na Liempo Recipe

You know, since we don’t often cooked grilled food due to the long prep time and difficulty, actually having grilled food makes meal time special.

One of the Filipino all-time favorite grilled food is the Grilled Pork Belly or Inihaw na Liempo. One can not simply heat up a grill without a liempo on top of it, right?

A Liempo grilled right means its both juicy and tasty from the inside out. We all had those liempos where it’s very promising at first but once you’ve taken a bite, it’s just dry and bland inside. The secret to coming up with a perfect Inihaw Na Liempo is the marinade.

One can not simply take the marinade for granted. In this recipe, you’ll learn what is needed to come up with a good marinade and how to marinate the liempo.

INGREDIENTS:

  • 1 kg Pork Belly (Liempo), 1 inch thick

For Basting:

  • 1/4 cup ketchup
  • 1 tbsp cooking oil

For the Marinade:

  • 1/2 cup soy sauce
  • 1/4 cup calamansi or lime juice
  • 6 cloves garlic, crushed
  • 3 tbsp brown sugar
  • 1/2 tsp ground black pepper
  • 1 tsp salt

HOW TO COOK:

  1. Combine marinade ingredients in a bowl.
  2. Marinate pork belly for at least 3 hours or overnight in a fridge.
  3. Remove the pork belly and reserve the marinade.
  4. Combine ketchup and oil with the reserved marinade then mix well. This will be used for basting.
  5. Grill marinated pork belly over hot charcoal for 10 minutes each side or until tender while basting with marinade mixture.
  6. Once finished, transfer to a serving plate. You can also chop into smaller pieces.
  7. Serve with steamed rice and partner with spicy toyo-mansi for dipping.
