Kundol Candy Recipe

INGREDIENTS:

  • 1 kg kundol/ kondol (winter melon/ white melon gourd), pared
  • 1 tbsp lime juice
  • 5 cups water
  • 3 cups sugar in 3 cups water
  • 2 to 3 cups sugar

HOW TO MAKE:

  1. Cut the pared kundol crosswise then lengthwise.
  2. Remove the pulp and seeds.
  3. Cut into desired candy sizes. Soak in the lime solution (lime juice combined with the 5 cups of water) for 4 to 6 hours.
  4. Remove kundol from the solution and wash thoroughly.
  5. Blanch in boiling water 5 to 10 minutes or until transparent.
  6. Cool in running water.
  7. In a sauce pan, boil the 3 cups sugar in 3 cups water.
  8. Add- in the kundol and boil for 5 minutes.
  9. Let stand overnight then remove the kundol from the syrup.
  10. Add 2 to 3 cups of sugar to syrup and boil.
  11. Add- in the kundol and let boil 5 to 10 minutes.
  12. Drain the kundol and arrange in trays to dry.
  13. Once dry, consume or pack in tightly sealed plastics. Enjoy!
