Easy Sinampalukang Kambing Recipe

INGREDIENTS:

  • 2 lbs goat meat, chopped
  • ¾ lb unripe tamarind (sampaloc)
  • 2 cups buttermilk
  • 2 tbsp fish sauce
  • 6 to 8 cups water
  • 1 medium yellow onion, chopped
  • ½ cup green onion, chopped
  • ¼ cup ginger, sliced
  • 4 to 6 pcs long green chilies

HOW TO COOK:

  1. Start by soaking the goat meat in buttermilk overnight.
  2. Wash the goat meat thoroughly with running water then set aside.
  3. Pour the water in a cooking pot, heat, and bring to a boil.
  4. Add the goat meat, tamarind, onion, and garlic.
  5. Let boil and simmer for 60 to 90 minutes (add more water if needed).
  6. While boiling, scoop the scums that floats on the soup.
  7. Remove the tamarind and ginger.
  8. Add- in the green onion and green chilies then cook for 5 minutes.
  9. Add- in the fish sauce, stir, then cook for 2 more minutes.
  10. Transfer to a serving bowl. Serve hot and enjoy!
