Soft Fluffy Pancakes Recipe

INGREDIENTS:

  • 60 g all purpose flour
  • 3/4 tsp baking powder
  • 5 pcs egg yolks (reserve egg whites)
  • 40 g granulated white sugar
  • Pinch of salt
  • 1 tsp vanilla extract

For the Meringue:

  • 5 pcs egg whites
  • 2 tbsp white sugar

HOW TO MAKE:

  1. Combine the egg yolks and 40 g white sugar in a large mixing bowl and mix well.
  2. In a separate mixing bowl, sift the all-purpose flour and baking powder then add them into the egg yolk mixture.
  3. Add- in the salt and vanilla extract then mix until smooth. Set aside.

For the Meringue:

  1. Place the egg whites in a mixing bowl then whisk using a hand mixer.
  2. When small bubbles starts to appear, add- in 2 tbsp sugar.
  3. Whisk again until stiff peaks appear.
  4. Put 1/3 of the meringue to the first mixture and mix.
  5. Repeat this process three times but for the second and last batch you need to use spatula to mix it.
  6. Continue mixing by cutting and folding until smooth and thick texture appear.
  7. Heat a non-stick pan with a low flame.
  8. Using a paper towel, grease the pan with little butter (don’t put too much butter because this will affect the texture of the pancake).
  9. Put 1/2 cup of the pancake batter.
  10. Cover and cook for 2 to 3 minutes.
  11. Put another 1/4 cup of batter to top.
  12. Flip and cook for another 2 to 3 minutes.
  13. Transfer pancakes to a serving plate. Enjoy!
