Tinutong Na Munggo Recipe

INGREDIENTS:

  • ¼ cup monggo beans
  • 2 cups glutinous rice (malagkit)
  • 2 grated mature coconuts (niyog) for the milk and cream (you may also use canned)
  • 1 & ½ cups sugar
  • warm water

HOW TO COOK:

  1. Start by toast monggo beans in a pan until golden brown.
  2. Remove the monggo beans’ skin.
  3. Wash glutinous rice in water and soak until grains swell.
  4. In a sauce pan, combine glutinous rice with toasted monggo beans. Set aside.
  5. To prepare coconut milk and cream, add 1 cup of warm water to the grated niyog then squeeze out coconut cream. Set aside.
  6. Add 6 cups of warm water and extract coconut milk from the grated niyog.
  7. Strain the coconut milk and the coconut cream separately.
  8. Add sugar to coconut milk and combine with the glutinous rice and toasted monggo beans.
  9. Cook and stir until mixture is set.
  10. Remove from heat and add the coconut cream.
  11. You may add sugar or salt, according to desired taste.
  12. Serve hot/ warm and enjoy!
