Ube Biko Recipe

INGREDIENTS:

  • ½ cup ube powder (powdered dehydrated purple yam) or freshly grated ube (purple yam)
  • ½ teaspoon ube flavoring
  • 1 & ½ cups glutinous rice (sweet rice or malagkit)
  • 4 cups coconut milk
  • 1 & ¾ cups water
  • 1 & ¼ cups granulated white sugar
  • ¼ teaspoon salt
  • toasted grated coconut (for topping)

HOW TO COOK:

  1. In a cooking pot, combine glutinous rice (malagkit) and water.
  2. Cover and heat the pot to boil .
  3. Once the water starts to boil, adjust the heat to a simmer.
  4. Continue to cook the rice until the water is completely absorbed. Stir once in a while to prevent the rice from sticking to the cooking pot.
  5. In another cooking pot, pour the coconut milk and let it boil.
  6. Gradually add the sugar to the coconut milk while stirring.
  7. Add the ube powder and stir.
  8. Cook for 5 to 7 minutes in low to medium heat while stirring.
  9. Add the salt and ube flavoring.
  10. Continue to cook for 3 minutes or until the texture becomes thick.
  11. Back to our first pot, once the glutinous rice absorbs the water, combine the coconut milk mixture with the glutinous rice.
  12. Mix well and continue to cook, while stirring, until the rice is completely cooked and the desired texture is achieved.
  13. Line a serving tray with banana leaves and transfer the Ube Biko here.
  14. Top with toasted grated coconut. Cut, serve, and enjoy!
