Atcharang Labanos Recipe

INGREDIENTS:

  • 3 medium labanos (daikon radish)
  • 1 medium red onion, sliced
  • 1 & ½ cup cane or white vinegar
  • 3 tsp whole peppercorn
  • 4 tbsp granulated white sugar
  • 3 & ½ tbsp sea salt

HOW TO MAKE:

  1. Start by slicing the labanos crosswise, as thin as possible (you can use mandolin slicer).
  2. Sprinkle 3 & ¼ tbsp of the salt over the labanos and mix well.
  3. Leave this for 30 minutes.
  4. Put the labanos in a colander and wash with running water then let the water drip. Set aside.
  5. In a mixing bowl, combine the vinegar, remaining ¼ tsp salt, sugar, and whole peppercorn.
  6. Mix well and then microwave for 30 seconds. Set aside.
  7. Arrange the labanos and onion in a pickling jar.
  8. Pour- in the vinegar mixture.
  9. Cover the jar and refrigerate for 3 days.
  10. Serve as side dish during lunch or dinner. Enjoy!
