Fiesta Pork Menudo Recipe

INGREDIENTS:

  • 1 lb pork, sliced into small pieces
  • ¼ lb pork liver, diced
  • 4 pcs hotdogs, sliced crosswise
  • ¼ cup raisins
  • 1 medium- sized carrot, cubed
  • 1 medium- sized potato, cubed
  • 1 can (8 oz) tomato sauce
  • 1 & ½ cups water
  • 1 Knorr pork cube
  • 1 medium- sized onion, chopped
  • 2 tsp garlic, minced
  • 1 tsp white sugar
  • Salt and ground black pepper, to taste
  • 4 tbsp cooking oil

HOW TO COOK:

  1. Pour and heat 2 tbsp of the cooking oil in a pot.
  2. Once the oil gets hot enough, sauté half of the onion until it gets soft.
  3. Add- in the pork liver and continue to cook for 2 to 3 minutes.
  4. Remove from the pot and set aside.
  5. On the same pot, heat the remaining oil.
  6. When the oil gets hot enough, sauté the remaining onion and garlic.
  7. Add- in the sliced pork and continue to cook in medium heat while stirring for 5 to 10 minutes.
  8. Add- in the hotdogs and cook for 2 minutes.
  9. Pour- in the tomato sauce and stir.
  10. Add- in the water then let it boil.
  11. Add- in the raisins and beef cube and stir.
  12. Cover and cook in low heat for 40 to 45 minutes.
  13. Add- in the sautéed liver then cover and cook for 5 minutes.
  14. Add- in the carrots and potatoes and stir.
  15. Cover, and cook for 10 to 12 minutes in medium heat.
  16. Add- in the sugar then season with salt and pepper.
  17. Remove from heat then transfer to a serving plate. Enjoy!
