Ilocano Special Bibingka Recipe

INGREDIENTS:

  • 2 cups glutinous rice flour
  • 1 cup coconut milk (gata)
  • 1/2 cup fresh milk or evaporated milk
  • 1 & 1/2 cup (1 can) condensed milk
  • 1/4 cup butter
  • 4 yolks of large eggs
  • 1/2 box cheese (kraft eden cheese), grated

HOW TO MAKE:

  1. Start by melting the butter using a microwave or heating over a pan.
  2. Use 1/4 of the melted butter to grease the foil or pan where you will pour the bibingka mixture.
  3. Combine the glutinous rice flour, coconut milk, fresh milk, condensed milk, egg yolks, and the remaining melted butter in a large bowl.
  4. Mix the ingredients thoroughly until well-blended.
  5. Preheat the oven to 375 F or 190 C.
  6. While the oven starts to heat, pour the bibingka mixture into the greased baking pan and cover it with an aluminum foil.
  7. Place in oven and bake for 25 minutes.
  8. Remove the pan from the oven (the bibingka is now half baked), then sprinkle it with the grated cheese.
  9. Bake the bibingka again for another 25 to 30 minutes, this time uncovered.
  10. You’ll know it’s done when the top layer of the bibingka turns to light brown.
  11. Let it cool under room temperature then serve. Enjoy!
