Chicken Guisantes Recipe

INGREDIENTS:

  • 1 kg chicken thigh, cut into serving pieces
  • 1 & ½ cup chicken broth
  • 1 can (400 g) diced tomatoes
  • 1 & ½ cup frozen green peas
  • 1 medium roasted red bell pepper, sliced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, crushed
  • Salt and pepper, to taste
  • 3 tbsp cooking oil

HOW TO COOK:

  1. In a cooking pot, pour- in the cooking oil and heat.
  2. Once the oil is hot, saute the garlic and onion until the onion becomes soft.
  3. Add- in the chicken slices.
  4. Cook each side of the chicken until it turns light brown.
  5. Add- in the diced tomatoes and the chicken broth then stir and let it boil.
  6. Cover and simmer for 30 to 40 minutes.
  7. Add- in the green peas then stir and cook for 3 minutes.
  8. Add -in the red bell pepper then stir and cook for another 3 minutes.
  9. Add salt and pepper to taste.
  10. Remove from heat and transfer to a serving plate. Enjoy!
