Ginataang Galunggong Recipe

INGREDIENTS:

  • 4 pcs galunggong, cleaned and salted
  • 4 pcs Serrano peppers (or siling haba, if not available)
  • 3 cups coconut milk
  • 1 tbsp fish sauce
  • 1 knob ginger, sliced into strips
  • 1 small red onion, sliced
  • 2 cloves crushed garlic
  • ½ tsp ground black pepper

HOW TO COOK:

  1. In a wide cooking pot, pour- in the coconut milk.
  2. Heat and let it boil.
  3. Add- in the garlic, ginger, onion, fish sauce, and ground black pepper.
  4. Stir and cover, then cook for 5 minutes.
  5. Arrange the galunggong and the pepper in the cooking pot.
  6. Cover and then continue cooking in medium heat for 30 minutes.
  7. Remove the cover and let the sauce reduce to about ½ to ¾ cups.
  8. Remove from heat and transfer to a serving plate. Enjoy!
