Easy Ilocano Insarabasab Recipe

Insarabasab Recipe

INGREDIENTS:

  • 1 kg pork belly (or pork shoulder), sliced into 2 cm thick pieces
  • 3 tbsp sukang Ilocos (or white vinegar)
  • ½ cup calamansi juice (or lemon juice)
  • 1 tsp ginger, minced
  • 3 red chilies, sliced
  • 2 pcs red onions, chopped
  • 6 cloves garlic, minced
  • Ground black pepper, to taste
  • Salt, to taste

HOW TO COOK:

  1. Combine the calamansi juice, garlic, and salt in a container (with cover).
  2. Add the pork slices and fully coat it with the mixture.
  3. Cover the container then let it marinate overnight.
  4. Prepare a charcoal grill.
  5. Place the marinated pork on top of grill until it is cooked (let the charcoal flame once in a while as it adds flavor to the pork).
  6. Remove pork from grill then chop them into smaller pieces.
  7. Place in a serving platter then mix- in the remaining ingredients. Enjoy!
