Paksiw Na Lechon Kawali Recipe

INGREDIENTS:

  • 700 g lechon kawali, sliced
  • 1 & ½ cups lechon sauce
  • 2 & ½ cups beef broth
  • 2 tbsp soy sauce
  • ¼ cup white vinegar
  • 3 cloves garlic, minced
  • 2 medium onion, diced
  • 6 pcs dried bay leaves
  • ½ cup granulated white sugar
  • 1 tsp whole peppercorn
  • Salt, to taste
  • 3 tbsp cooking oil

HOW TO COOK:

  1. Pour and heat the oil in a cooking pot.
  2. Once oil is hot enough, saute the garlic and onion.
  3. Once the onion gets soft, add the lechon kawali then saute for 3 minutes.
  4. Add the soy sauce and beef broth then let it boil.
  5. Add the whole peppercorn and dried bay leaves.
  6. Cover the pot and cook in medium heat for 25 to 30 minutes.
  7. Pour the vinegar into the pot then let the liquid re-boil.
  8. Add lechon sauce, stir, then cover and cook for 10 minutes.
  9. Add sugar and salt then continue to cook until the liquid reduces to half.
  10. Remove from heat and transfer to a serving bowl. Enjoy!
