Red Velvet Pancakes Recipe

INGREDIENTS:

  • 1 cup all- purpose flour
  • 3 tsp baking powder
  • 1 tbsp unsweetened cocoa powder
  • 1 & 1/2 tbsp sugar
  • 1 cup powdered sugar, plus extra for dusting
  • 2 tbsp butter, melted, plus more to cook
  • Salt, to taste
  • 1 pack 8 oz cream cheese, at room temperature
  • 1/4 cup whole milk
  • 1 large egg, beaten
  • 3/4 cup buttermilk
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring
  • Semi-sweet chocolate chips (for garnish)
  • Toasted almonds (for garnish)

HOW TO MAKE:

  1. In a large mixing bowl, sift together the flour, baking powder, cocoa powder, salt, and sugar.
  2. Add- in the egg, buttermilk, butter, and food coloring then mix together until combined.
  3. In a pan, melt the butter medium-low heat.
  4. Pour ¼ cup of the batter onto the center and swirl pan to form a circle.
  5. Cook for 30 seconds then top with chocolate chips, if using.
  6. Cook until bubbles appear on the surface, about 30 seconds more.
  7. Flip and cook for 1 minute. Set aside. Repeat with remaining batter.

For the Cream Cheese Frosting:

  1. Whisk cream cheese in a bowl.
  2. Whisk in sugar, vanilla, and milk until smooth.
  3. Top pancakes with cream cheese frosting.
  4. Sprinkle with almonds and dust with confectioners’ sugar, if desired.
