Stir-Fried Cucumbers With Ground Pork Recipe

INGREDIENTS:

  • 3 pcs cucumbers, peeled and sliced
  • 150 g lean pork, minced
  • 150 g fatty pork, minced
  • 1 tsp chili flakes
  • 6 cloves garlic, minced
  • Sea salt, to taste
  • Peanut oil, for cooking
For the Sauce:
  • 2 tbsp water
  • 2 tsp cornstarch
  • 2 tsp soy sauce
  • 1 tsp patis
  • 1 tbsp Chinese cooking wine
  • 1 tbsp toasted sesame oil

HOW TO COOK:

  1. In a large bowl, place the cucumbers and generously sprinkle salt all over it.
  2. Mix and toss then set aside for 15 minutes.
  3. Rinse the cucumber in running cold water and remove excess salt, drain in a colander then set it aside.
  4. Pour and heat the peanut oil in a large wok.
  5. Whe hot enough, sauté the garlic and chilli flakes for 30 seconds then add the lean pork mince, fatty pork mince and a bit of salt.
  6. Stir fry until light brown in color.
  7. Remove the pork from the wok then set aside and wipe the wok clean.
  8. Place the wok back into your stove, heat peanut oil in high heat until it smokes then add the cucumbers and stir fry for 2 minutes.
  9. Add the pork then stir fry for one more minute.

For the Sauce:

  1. Mix all sauce ingredients in a small bowl.
  2. Pour the sauce in the wok then stir fry until sauce thickens.
  3. Remove from heat and transfer to a serving plate. Enjoy!
