Sweet Ginataang Mais At Munggo Recipe

INGREDIENTS:

  • 1 cup toasted mung beans (cracked)
  • 1 cup sweet corn
  • 6 cups coconut milk
  • ¾ cups sweet rice (glutinous rice or malagkit)
  • 1 tsp vanilla extract
  • 1 cup granulated white sugar
  • ¼ tsp salt (optional)

HOW TO COOK:

  1. In a cooking pot, pour in the coconut milk and let it boil.
  2. Stir- in the sweet rice or malagkit.
  3. Cook for 5 minutes in medium heat while stirring every minute.
  4. Add and stir- in the toasted mung beans.
  5. Cook for 6 to 8 minutes.
  6. Add and stir- in the corn.
  7. Continue to cook while constantly stirring for 8 to 10 minutes.
  8. Add and stir- in the sugar.
  9. Add and stir- in the vanilla extract.
  10. Stir and cook until the mung beans are soft.
  11. You may add salt, if preferred.
  12. Transfer to a serving bowl. Serve hot and enjoy!
