INGREDIENTS:

  • 1/2 kg (16 oz) Cassava or Kamoteng kahoy
  • 1 cup (237 ml) Coconut Milk or Gata
  • 1/4 cup (76.5 g) Condensed milk
  • 1/4 cup (63 g) Evaporated milk
  • 2 Eggs
  • 1/8 (16 g) cup Grated cheese
  • 2 tbsp (30 ml) Melted butter
  • 1/2 cup (100 g) White sugar

For the Toppings:

  • 1 cup (237 ml) Coconut Milk or Gata
  • 1/4 cup (76.5 g) Condensed milk
  • 1/8 (16 g) cup Grated cheese
  • 1 tbsp (13 g) White sugar
  • 1 tbsp (9 g) All purpose flour
  • Extra grated cheese on top, optional

HOW TO COOK:

  1. Preparing the cassava (if you already bought grated cassava, you can skip this part):Peel off the skin of the cassava with a knife. Now use a grater or food processor to grate the cassava. Squeeze off any excess juice from the grated cassava.
  2. Preparing the batter:In a bowl, mix together the grated cassava, evaporated milk, ¼ cup of the condensed milk, sugar, and eggs. When everything is mixed well, add 1 cup of the coconut milk and continue to mix. Then finally, add about ⅛ cup of grated cheese then mix again. Put the batter on the baking pan of choice and bake on a preheated oven at 175 C for 1 hour.
  3. Preparing the topping:In a saucepan, put in 1 tbsp flour, 1 tbsp sugar, and ¼ cup condensed milk. Mix everything in low heat until everything is fully incorporated. Add in 1 cup of coconut milk and stir. When the sauce is starting to thicken, finally add ⅛ cup of grated cheese and continue to stir until the sauce thickens then turn off heat.
  4. Preparing the cake:When the batter is finally baked, take it out of the oven but don’t remove it from the pan yet. Add in the sauce on top of the batter and spread it evenly. You can add in some grated cheese on top as much as you like. Put the pan back in the oven and bake again for about 15-20 minutes more. When it’s done, remove the cake from the oven and let it cool off before serving. Done!
