Iraid Recipe

INGREDIENTS:

  • 1 & 1/2 cups kamoteng kahoy, grated
  • 1 & 1/2 cups yellow kamote, grated
  • 1/4 cup coconut milk (1st extraction)
  • 7 tbsp brown sugar
  • Banana leaves, for wrapping

HOW TO MAKE:

  1. Start by squeezing the grated kamoteng kahoy and yellow kamote to extract the juices.
  2. In a bowl, pour- in the coconut milk and mix the extracted juices from the kamoteng kahoy and yellow kamote.
  3. Add- in the brown sugar and stir until the sugar dissolves.
  4. Add- in the grated kamoteng kahoy and yellow kamote, combine with the coconut milk mixture, then mix well.
  5. Scoop 3 tbsp of this mixture and wrap in a 8″ x 5″piece of banana leaf (wilt banana leaves first over an open flame).
  6. Tie in pairs and steam the batch for 30 minutes.
  7. Allow to cool then serve. Enjoy!
