INGREDIENTS:

  • 6 pcs small size or 2 pieces medium size kamote (sweet potato)
  • 1/2 cup (64 grams) all-purpose flour
  • 1/2 cup (104 grams) brown sugar

HOW TO COOK:

  1. Boil water on a pot. Cook the kamote on the boiling water until soft (try piercing the kamote with a fork. It’s done when you can easily pierce it). Remove from water and let it cool until you can hold it. Peel off the skin of the kamote.
  2. Mash the peeled kamote with a fork or masher. Mix together the mashed kamote, sugar, and flour until ingredients are fully incorporated. Grab a bit of the mixture (amount that fits your palm) then press it together and mold it into a round, half inch thick, shape. Continue to mold the rest of the mixture.
  3. Preheat a pan with oil on low-medium heat. Fry the kamote until golden brown. Done.
