Pancit Buko Recipe

INGREDIENTS:

  • 2 cups shredded coconut meat
  • 1/2 cup fresh coconut cream
  • 1/2 cup shrimps, shells and heads removed, deveined
  • 2 pcs squid, skinned and sliced into rings
  • Clam meat, from 12 pcs steamed Manila clams
  • 2 tsp garlic, minced
  • 1 tbsp onions, chopped
  • Salt and pepper, to taste
  • 4 stems cilantro, coarsely chopped (for garnish)

HOW TO COOK:

  1. In a sauce pan, pour and simmer the coconut cream over very low heat until coconut oil and latik separate. Set the latik aside for garnishing.
  2. In a separate pan, pour- in the coconut oil.
  3. Add- in the garlic and onions then sauté until fragrant.
  4. Add- in the coconut meat and cook for 2 minutes.
  5. Add- in the shrimp and squid then stir-fry for a few seconds.
  6. Add- in the clam meat and season to taste.
  7. Remove from heat and transfer to a serving dish.
  8. Top with cilantro and reserved latik. Enjoy!
