Creamy Coleslaw Recipe

Coleslaw is basically a vegetable salad made up primarily of raw shredded cabbage and a special dressing. Several variations of this side dish may include different complimentary vegetables and spices.

Coleslaw may be a popular dish around the world but Filipinos sure love them as well.

It is normally seen in Filipino buffets, served as appetizers. Commercially, we see these as side dish in popular restaurants like KFC and Kenny Rogers. In fact, KFC probably set the standard of how coleslaw should taste like.

As a kid, I first encountered coleslaw as a burger topping or ‘add-on’ when eating in those 24-hour burger stands we see in the streets. I don’t remember the name of the stand or I don’t know if they even have them as an add-on today. Can anyone relate? Haha.

In this coleslaw recipe, we’re making it extra special because we will be making it extra creamy. We’ll also be having two special ingredients in the salad: pineapples and raisins. This will add a tangy-sweet taste to our salad.

So go ahead and gather up what we need and get ready to make one! This recipe is so easy, you could make them not just on special occasions but with every dish you want them to.

INGREDIENTS:

  • 2 cups finely shredded cabbage
  • 1 cup thinly sliced carrots
  • 1/3 cup crushed pineapple, well-drained
  • ¼ cup raisins
  • ¼ cup white sugar

For the Dressing:

  • ¾ cup mayonnaise
  • ¼ cup thick whipping cream

HOW TO MAKE:

  1. Put all ingredients in a bowl
  2. Mix well and chill before serving.
