Bibingka Galapong Recipe

INGREDIENTS:

  • 2 cups coconut milk
  • 2 cups rice flour
  • 2 tbsp baking powder
  • 4 eggs, well beaten
  • ¼ cup melted margarine
  • 1 cup sugar
  • ½ tsp salt
  • ¼ cup sugar (for topping)
  • ¼ cup coconut cream (for topping)

HOW TO COOK:

  1. In a mixing bowl, combine sugar and beaten eggs.
  2. In a separate bowl, combine salt and rice flour then add this to the egg mixture.
  3. Add- in melted margarine, coconut milk, and baking powder to the egg mixture.
  4. Prepare 3 large round molds by lining them with banana leaves.
  5. Pour mixture equally into the molds.
  6. Bake in 375 F or 190 C oven.
  7. When half- done, take it out from the oven and brush top with coconut cream and sugar.
  8. Continue to bake until golden crust is formed.
  9. Once done, allow to cool before serving. Share and enjoy!
