Coconut Flan Recipe

INGREDIENTS:

  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) evaporated milk
  • 1 can (12 oz) condensed milk
  • 6 eggs
  • 1 cup sugar
  • ¼ cup water
  • Coconut flakes for topping (optional)

HOW TO COOK:

  1. Combine the sugar and the water in a microwave- safe bowl.
  2. Stir well until sugar is completely dissolved.
  3. Microwave on high for about 6 to 7 minutes or until color changes to honey- gold.
  4. Immediately pour caramel into ramekins or small round molds.
  5. In a medium- sized bowl, combine the eggs, the coconut milk, the evaporated milk, and the condensed milk.
  6. Gently stir until well- blended.
  7. With a cheesecloth, strain egg- milk mixture.
  8. Pour strained mixture into prepared ramekins or small round molds.
  9. Cover ramekins or small round molds with foil and arrange in a wide, oven-safe dish with about 1-inch of water (water bath).
  10. Bake in the oven at 375 F or 190 C for about 40 to 45 minutes or until toothpick inserted in the middle of flan comes out clean.
  11. Remove from oven, allow to cool and refrigerate to completely set.
  12. When ready to serve, turn flan over on a serving plate, ending with caramel on top. Top with optional coconut flakes. Enjoy!
