Fish Fillet With Tausi Recipe

INGREDIENTS:

  • 1 lb fish fillet (mahi-mahi, cod, or cream dory), cut into cubes
  • 3 tbsp tausi (salted black beans)
  • 3 & ½ tbsp cornstarch
  • ¾ cups chicken stock
  • 5 tbsp sherry cooking wine
  • ½ tsp ginger, minced
  • ½ tsp garlic, minced
  • 4 stalks green onion, chopped
  • ½ tsp sugar
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 & ½ tsp sesame oil
  • 1 cup cooking oil

HOW TO COOK:

  1. Start by marinating the fish cubes.
  2. In a bowl, combine 3 tbsp sherry cooking wine, salt, and 1 tsp sesame oil then mix well.
  3. Add the fish cubes and marinate for 30 minutes.
  4. Soak the salted black beans in warm water for 15 minutes. Drain and set aside.
  5. Start to fry the fish by heating the oil in a cooking pot.
  6. Remove the fish from the marinade and roll the fish cubes on a bowl with 3 tbsp cornstarch (make sure that the fish is fully coated).
  7. Fry the coated fish until the color turns light brown.
  8. Remove from the cooking pot and place in a plate. Set aside.
  9. Make the sauce by combining the chicken broth, ½ tsp sesame oil, 2 tbsp sherry cooking wine, ground black pepper, ½ tbsp cornstarch, and sugar. Mix well.
  10. On a separate frying pan, heat 3 tbsp of cooking oil (re-use the oil that fried the fish). Saute garlic, ginger, and salted black beans for 30 to 60 seconds.
  11. Put- in the fried fish cubes and stir.
  12. Pour- in the sauce mixture and stir and continue to cook until the sauce starts to thicken.
  13. Sprinkle some green onions (optional).
  14. Transfer to a serving plate. Enjoy!
