Mango Sago Recipe

INGREDIENTS:

  • 5 fresh mangoes
  • 1/4 cup small sago (tapioca pearls), uncooked
  • 2 cups water
  • 1/2 cup evaporated milk
  • 1/4 cup sugar

HOW TO MAKE:

  1. Pour the water in to a large pot and bring water to a boil over medium heat.
  2. Add the sago and cook, stirring regularly, for about 7 to 10 minutes.
  3. Turn off the heat and cover.
  4. Let the sago stand in hot water until translucent and cooked through.
  5. Rinse the cooked sago under cold running water to remove excess starch using a colander.
  6. Drain well and let them completely cool.
  7. Peel the mangoes and cut the flesh from pits.
  8. Cube the flesh of four of the mangoes.
  9. Dice the flesh of the remaining 1 mango and set aside to use as garnish.
  10. Combine the cubed mango flesh, evaporated milk, and sugar in a blender or food processor.
  11. Process until smooth and thick.
  12. Combine the mango puree and sago in a container.
  13. Chill in the refrigerator until ready to serve.
  14. Divide mango sago into serving bowls and garnish with diced mangoes. Enjoy!
