Tokneneng Recipe

INGREDIENTS:

  • 6 pcs chicken eggs, hard boiled
  • 1 cup all- purpose flour
  • 3 tbsp cornstarch
  • 1/4 cup annatto seeds (atsuete)
  • 1 cup water
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 2 cups cooking oil

HOW TO COOK:

  1. Put the cornstarch in a container and dredge the boiled chicken eggs. Set aside.
  2. Combine the  all- purpose flour, salt, and pepper and mix thoroughly.
  3. Dilute the annatto seeds (atsuete) in the water until the reddish color comes out.
  4. Combine the annatto seed liquid with the flour mixture and mix thoroughly.
  5. Put the boiled chicken eggs in the mixing bowl and coat with the batter.
  6. Heat the deep pan and pour the cooking oil.
  7. When the oil is hot enough, deep- fry the coated eggs until the coating is crispy (you can use a serving spoon to scoop the eggs from the mixing bowl).
  8. Remove the fried eggs from the pan and transfer to a serving plate.
  9. Serve with spiced vinegar or special sauce. Enjoy!
