Chicken Gumbo Recipe

INGREDIENTS:

  • 10 oz cooked chicken breast, diced
  • 1 lb smoked kielbasa sausage, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup to 1 cup tomato sauce
  • 3 cups chicken broth
  • 1/4 cup tapioca flour, for thickening (dissolved in 1/4 cup water)
  • 1 medium onion, diced
  • 3 to 4 celery stalks, sliced
  • 1 large green pepper, diced
  • 1 tsp salt
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1/2 to 1 tsp cayenne pepper, to taste
  • 2 tbsp cooking oil

HOW TO COOK:

  1. Pour oil on a large pan and heat over medium- high heat.
  2. Saute the onion, celery, and green pepper, cook for about 5 minutes or until vegetables are soft.
  3. Add- in the sausage, chicken breast, salt, paprika, cumin, cayenne pepper, tomatoes, tomato sauce, and broth and mix together.
  4. Bring to a simmer then turn the heat to low.
  5. Add the tapioca flour thickener.
  6. Cover and continue to simmer for about 30 minutes.
  7. Taste and add salt if needed.
  8. Remove from heat and transfer to a serving plate. Enjoy!
