Easy Chicken Menudo Recipe

INGREDIENTS:

  • 1 & 1/2 kg chicken, cubed
  • 200 g chicken liver
  • 3 jumbo sized red hotdogs, cut into circles
  • 1 large carrot, cubed
  • 1 large potato, cubed
  • 1 red bell pepper, sliced into squares
  • 1/2 cup green peas
  • 1/4 cup tomato paste
  • 2 cups tomato sauce
  • 1/2 cup water
  • 2 tbsp sugar
  • 2 tbsp white vinegar
  • 1/2 cup soy sauce
  • 1/4 tbsp black pepper
  • 1 onion, chopped
  • 5 cloves of garlic, minced
  • Salt and pepper to taste
  • Cooking oil

HOW TO COOK:

  1. In a bowl, combine the tomato paste, vinegar, soy sauce and pepper.
  2. Pour over the chicken and liver then marinate in the refrigerator for at least 30 minutes.
  3. In a pot, fry the cubed potatoes and carrots in a little bit of oil until tender, but still firm. Remove and set aside.
  4. In the same pot, the saute garlic and onions.
  5. Add- in the the marinaded chicken and liver pieces, as well as the marinade.
  6. Simmer for about 10 minutes, or until the chicken pieces are completely cooked (stir occasionally).
  7. Add- in the potatoes, carrots, peas, and bell peppers.
  8. After a few minutes, add the hotdog slices.
  9. Pour- in the tomato sauce and 1/2 cup of water then add the sugar.
  10. Season with salt and pepper to taste.
  11. Allow to simmer until the sauce thickens.
  12. Remove from heat and transfer to a serving bowl. Enjoy!
